Method

Cooking the Pork Chop

    Sear the Pork Chop

    Season the pork chop with salt and black pepper. Heat olive oil in a skillet over medium-high heat and sear the pork chop for 4-5 minutes on each side until cooked through and golden brown. Remove from heat and let it rest.

Preparing the Grits

    Cook the Grits

    In a pot, bring water to a boil. Add salt and grits, stir well, and reduce to a simmer. Cook for 20-25 minutes, stirring occasionally, until thick. Stir in butter before serving.

Charred Kale

    Char the Kale

    In a separate skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute. Add chopped kale and cook until wilted and slightly charred, about 5-7 minutes. Season with salt to taste.

Making Red-Eye Gravy

    Prepare the Gravy

    In the same skillet used for the pork, add drippings and heat over medium. Whisk in flour until blended, then gradually add brewed coffee. Simmer until thickened, about 3-5 minutes.
