    Preheat the oven to 400°F (200°C). Toss the diced pumpkin with 1 tablespoon of olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until tender and slightly caramelized.

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the pork belly pieces and cook until crispy and browned on all sides, about 10-15 minutes. Remove from heat and set aside.
