Cook the Hash
In a large skillet, heat olive oil over medium heat. Add the diced onion and bell pepper, and sauté until they are soft, about 5 minutes. Add the smoked potatoes to the skillet, season with salt and black pepper, and cook until the potatoes are heated through and slightly crispy, about 10-15 minutes.

Toast the Bread
While the eggs are cooking, toast the slices of bread until golden brown.

Serve
Plate the hash mixture, top with the cooked eggs, and serve with the toasted bread on the side. Garnish with fresh herbs if desired.
