Cooking Instructions

  1. 1

    Prepare the Ingredients

Dice the smoked potatoes, onion, and bell pepper into small pieces.

  2. 2

    Cook the Hash

In a large skillet, heat olive oil over medium heat. Add the diced onion and bell pepper, and sauté until they are soft, about 5 minutes. Add the smoked potatoes to the skillet, season with salt and black pepper, and cook until the potatoes are heated through and slightly crispy, about 10-15 minutes.

  3. 3

    Cook the Eggs

In a separate pan, scramble the eggs or fry them sunny side up, depending on your preference.

  4. 4

    Toast the Bread

While the eggs are cooking, toast the slices of bread until golden brown.

  5. 5

    Serve

Plate the hash mixture, top with the cooked eggs, and serve with the toasted bread on the side. Garnish with fresh herbs if desired.
