    Prepare the Potatoes

    Peel the Russet potatoes and cut them into thin shoestring fries. Rinse the cut fries in cold water to remove excess starch and pat them dry with a paper towel.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). You can use a thermometer to ensure the oil is at the right temperature.

    Fry the Potatoes

    Carefully add a handful of the shoestring fries to the hot oil, making sure not to overcrowd the pot. Fry for about 3-4 minutes or until golden brown and crispy. Remove the fries with a slotted spoon and drain on paper towels.

    Season the Fries

    While the fries are still hot, sprinkle them with salt to taste. Toss gently to ensure even seasoning.

    Serve the fries hot with a side of ketchup for dipping.
