    Boil the Eggs

    Place the eggs in a pot and cover them with cold water. Bring to a boil over medium-high heat. Once boiling, cover the pot and remove from heat. Let sit for 12 minutes.

    Cool and Peel

    Transfer the eggs to a bowl of ice water to cool for about 5 minutes. Crack the shells and peel the eggs under running water.

    Prepare the Filling

    Slice the eggs in half lengthwise and remove the yolks. In a mixing bowl, mash the yolks with mayonnaise, Dijon mustard, hot sauce, salt, and black pepper until smooth.

    Fill the Egg Whites

    Using a piping bag or spoon, fill the egg white halves with the yolk mixture.

    Top with Craquelin

    Sprinkle the local craquelin over the filled eggs generously.
