    Preheat the Oven

    Preheat your oven to 400°F (200°C). Place a 10-inch cast iron skillet in the oven while it preheats.

    Mix Dry Ingredients

    In a large bowl, whisk together the cornmeal, all-purpose flour, baking powder, baking soda, and salt.

    Combine Wet Ingredients

    In another bowl, beat the eggs, then add the milk and melted Steen's butter. Whisk until well combined.

    Combine Mixtures

    Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix. Fold in the crumbled bacon.

    Bake the Cornbread

    Carefully remove the hot skillet from the oven and add a little butter to coat the bottom. Pour the cornbread batter into the skillet. Bake for 20-25 minutes or until golden brown and a toothpick inserted into the center comes out clean.

    Serve

    Let the cornbread cool for a few minutes before slicing. Serve warm with fig jam and additional Steen's butter on the side.
