Prepare the Ingredients
Chop the smoked brisket into small bite-sized pieces. Finely slice the green onions, separating the white and green parts.

Scramble the Eggs
In a large skillet or wok, heat 1 tablespoon of sesame oil over medium heat. Beat the eggs in a bowl, season with salt and pepper, then pour them into the skillet. Scramble the eggs until fully cooked, then remove from the skillet and set aside.

Cook the Fried Rice
In the same skillet, add the remaining sesame oil and the white parts of the green onions. Sauté for 1-2 minutes until fragrant. Add the chopped brisket and stir-fry for another 2-3 minutes.

Combine Ingredients
Add the cooked jasmine rice to the skillet, breaking up any clumps. Stir in the soy sauce, and mix well. Add the scrambled eggs and toss everything together until evenly combined.

Finish and Serve
Once everything is heated through, remove from heat. Sprinkle with the green parts of the green onions and sesame seeds before serving.
