Cooking the Steak

    Prepare the Steak

    Season the hanger steak with salt and black pepper on both sides.

    Sear the Steak

    In a skillet, heat olive oil over medium-high heat. Add the seasoned steak and sear for about 4 minutes on each side for medium-rare, or until desired doneness. Remove the steak from the skillet and let it rest.

Making the Cognac Sauce

    Sauté the Mushrooms and Shallots

    In the same skillet, add the sliced mushrooms and minced shallots. Sauté until the mushrooms are browned.

    Deglaze with Cognac

    Add the cognac to the skillet and cook for 1-2 minutes, scraping up any browned bits from the bottom.

    Add Broth and Cream

    Pour in the beef broth and bring to a simmer. Allow it to reduce slightly, then stir in the heavy cream and chopped parsley. Cook for another minute.

Preparing the Mashed Potatoes

    Boil the Potatoes

    In a pot, boil the quartered potatoes in salted water until fork-tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter, milk, salt, and pepper. Mash until smooth and creamy.

Plating

    Serve

    Slice the rested steak and plate it with the mashed potatoes. Spoon the cognac sauce over the steak and serve immediately.
