    Prepare the Pig Ears

    Clean the pig ears thoroughly under cold water. Remove any hair and excess fat.

    Boil the Pig Ears

    In a large pot, bring water to a boil. Add the cleaned pig ears and boil for about 1 hour until tender. Drain and let them cool.

    Season the Ears

    Once cooled, slice the pig ears into strips. In a bowl, mix lime juice, chili powder, garlic powder, salt, and black pepper. Toss the pig ear strips in the mixture until well coated.

    Fry the Pig Ears

    In a deep skillet or fryer, heat the vegetable oil over medium-high heat. Once hot, carefully add the pig ear strips in batches and fry until golden brown and crispy, about 5-7 minutes.

    Drain and Serve

    Remove the crispy pig ears from the oil and drain on a paper towel. Garnish with chopped fresh cilantro and serve with additional lime wedges on the side.
