Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into thin fries, about 1/4 inch thick.

Soak the Fries
Place the cut fries in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Drain the soaked fries and pat them dry with paper towels. Fry them in batches for about 4-6 minutes or until golden brown and crispy.

Season and Toss
Remove the fries from the oil and drain on paper towels. While still hot, drizzle with truffle oil, sprinkle with grated Parmesan cheese, salt, and black pepper. Toss to coat evenly.
