Prepare coffee-liqueur drizzle
In a small bowl, combine the coffee liqueur and cooled espresso (or strong coffee). Set aside. This will be used to lightly soak the ice cream rolls for extra coffee flavor.

Whip the cream
Chill a mixing bowl and beaters briefly if possible. Pour the heavy whipping cream into the bowl, add the granulated sugar and vanilla extract. Whip on medium-high speed until soft to medium peaks form (the cream should hold shape but still be shiny), about 2–4 minutes. Refrigerate the whipped cream until ready to assemble.

Coat the ice cream
Keep the coffee ice cream slightly softened for easier shaping: remove from freezer about 3–5 minutes before assembling (do not let it melt). Place the toasted coconut in a shallow bowl or plate. Working quickly, roll each scoop of coffee ice cream in the toasted coconut so the exterior is evenly coated. Press gently so the coconut adheres; if the ice cream is too hard, wait an extra minute to soften.

Arrange and drizzle
Place three coated scoops into each chilled dessert bowl or coupe. Lightly spoon or drizzle about 10 ml (2 tsp) of the coffee-liqueur mixture over the scoops in each bowl — enough to add flavor but not so much that it melts the ice cream. If you prefer a stronger kick, add up to 15 ml (1 tbs) per serving.

Top with whipped cream and garnish
Pipe or dollop a generous portion of the chilled whipped cream over each set of scoops. Sprinkle remaining toasted coconut over the whipped cream. If using, scatter the chocolate shavings on top and finish with a very small pinch of coarse sea salt to enhance the coffee flavors.

Serve immediately and note: because of the ice cream and whipped cream, this item is not suitable for take-out and should be enjoyed on premises.
