Make House Chocolate Pot

    Warm dairy

    In a small saucepan over medium heat, combine the whole milk, heavy cream, and granulated sugar. Warm gently, stirring occasionally, until the sugar dissolves and mixture is just below simmering (small bubbles at the edge), about 3–4 minutes.

    Melt chocolate

    Remove the pan from heat and add the chopped dark chocolate. Let sit 30 seconds to soften, then whisk until smooth and fully melted.

    Finish

    Whisk in the unsalted butter, vanilla extract and a pinch of sea salt until butter is melted and mixture is glossy and uniform. Taste and adjust salt or vanilla if desired.

    Portion

    Divide the chocolate pot evenly between two small ramekins (about 2–3 oz per ramekin). If the restaurant offers single portions, portion accordingly to one ramekin per eligible guest. Let cool 5 minutes at room temperature.

    Garnish & Serve

    Top each ramekin with a dollop (about 1 tablespoon) of whipped cream, arrange fresh berries on the side or on top, and add a mint sprig if desired. Serve warm or at room temperature with a small sauce spoon.

    Make ahead and reheat (optional)

    Chocolate pots can be prepared up to 24 hours in advance, covered and refrigerated. To serve warm, reheat gently in a 300°F oven for 6–8 minutes or microwave in 10–15 second bursts until warmed through, stirring between bursts.
