    preheat and prepare dough

    Preheat oven to 475°F (245°C). If using a pizza stone, place it in the oven while preheating. Lightly dust a work surface with the all-purpose flour. Stretch or roll the pizza dough into a roughly 12-inch round (about 1/4-inch thick). Transfer to a parchment paper–lined pizza peel or a baking sheet. Brush the dough lightly with 1 tablespoon olive oil, leaving a small rim for the crust.

    make tangy cream sauce

    In a small bowl combine 1 cup sour cream, 2 tablespoons mayonnaise, 1 teaspoon Dijon mustard, 1 teaspoon salt, and 1 teaspoon black pepper. Whisk until smooth. Taste and adjust seasoning if needed.

    assemble cheese layer

    Spread the tangy cream sauce evenly over the oiled dough, leaving a 1/2-inch border for the crust. Sprinkle 1.5 cups shredded mozzarella evenly over the sauce, then top with 3/4 cup shredded cheddar, distributing the cheese to cover the surface.

    Preheat a skillet over medium heat. Add 6 slices bacon and cook until crisp, about 6–8 minutes, turning occasionally. Transfer cooked bacon to a paper towel–lined plate to drain; when cool, chop into 1/2-inch pieces.

    Thinly slice 1/2 small red onion and halve 10 cherry tomatoes. Roughly chop 1 cup baby spinach if leaves are large. Scatter the chopped bacon, sliced onion, halved cherry tomatoes, and spinach evenly over the cheese layer.

    Make four small wells in the cheese and toppings (space evenly). Crack 4 whole eggs, one into each well. Leave the yolks whole unless you prefer them broken. Season the eggs and toppings with the remaining 1/2 teaspoon salt and 1/2 teaspoon black pepper and sprinkle 1/2 teaspoon crushed red pepper flakes over the pizza if using.

    Slide the pizza (on the parchment) onto the preheated pizza stone or place the baking sheet in the oven. Bake at 475°F (245°C) until crust is golden and cheese is bubbling, and egg whites are set but yolks still runny, about 10–14 minutes. For firmer yolks, bake an extra 2–4 minutes. Keep an eye after 8 minutes to avoid overcooking.

    Remove pizza from oven and let rest 2 minutes. Sprinkle 2 tablespoons chopped fresh chives over the pizza. If desired, add an extra pinch of crushed red pepper. Slice into 4–6 pieces and serve immediately.
