Main Ingredients

Method

Preparation

  1. 1

    Prepare the Steak

Allow the filet mignon to come to room temperature for about 30 minutes before cooking. This helps ensure even cooking.

  2. 2

    Season the Steak

Pat the filet mignon dry with paper towels. Rub the olive oil over the steak, then season generously with salt and black pepper on both sides.

Cooking

  1. 3

    Preheat the Pan

Heat a heavy skillet or cast-iron pan over medium-high heat until it is very hot.

  2. 4

    Sear the Steak

Place the filet mignon in the hot pan and sear for about 4-5 minutes without moving it to develop a nice crust.

  3. 5

    Flip and Add Flavor

Flip the steak using tongs. Add the butter and fresh rosemary to the pan. Continue to cook for another 4-5 minutes for medium-rare, spooning the melted butter over the steak as it cooks.

  4. 6

    Check for Doneness

Use a meat thermometer to check the internal temperature. For medium-rare, aim for 130°F (54°C). Adjust cooking time as needed for your preferred doneness.

Resting

  1. 7

    Let it Rest

Remove the filet mignon from the pan and transfer it to a cutting board. Tent with foil and let it rest for 5-10 minutes before slicing.
