Method

Preparing the Salmon

  1. 1

    Marinate the Salmon

In a bowl, mix together 4 tablespoons of olive oil, 2 tablespoons of lemon juice, minced garlic, 1 teaspoon of salt, and 1 teaspoon of black pepper. Place the salmon fillets in the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes.

  2. 2

    Preheat the Grill

While the salmon is marinating, preheat your grill to medium-high heat.

Cooking the Salmon

  1. 3

    Grill the Salmon

Once the grill is ready, remove the salmon from the marinade and place it on the grill skin-side down. Cook for about 6-8 minutes on one side, then carefully flip and grill for another 4-6 minutes or until the salmon is cooked through and flakes easily with a fork.

Preparing the Vegetables

  1. 4

    Prep the Vegetables

While the salmon is grilling, wash and cut the asparagus, bell peppers, and zucchini into bite-sized pieces.

  2. 5

    Season the Vegetables

In a bowl, toss the cut vegetables with 2 tablespoons of olive oil, 1 teaspoon of salt, and 1 teaspoon of black pepper.

Cooking the Vegetables

  1. 6

    Grill the Vegetables

Once the salmon is cooked, place the seasoned vegetables on the grill. Grill for about 5-7 minutes, turning occasionally, until they are tender and slightly charred.

Serving

  1. 7

    Plate the Dish

Serve the grilled salmon alongside the grilled seasonal vegetables. Drizzle with additional lemon juice if desired.
