Method
Preparation
- 1
Prepare the Filet Mignon
Remove the filet mignon from the refrigerator and let it come to room temperature for about 30 minutes. This ensures even cooking.
- 2
Season the Meat
Rub the filet mignon with 1 tablespoon of olive oil, salt, black pepper, garlic powder, and fresh rosemary. Make sure to coat the meat evenly with the seasoning.
Cooking the Vegetables
- 3
Prepare the Vegetables
Wash and trim the asparagus, peel and slice the carrots, and remove the seeds and cut the bell pepper into strips.
- 4
Sauté the Vegetables
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the asparagus, carrots, and bell pepper. Sauté for about 5-7 minutes or until the vegetables are tender but still crisp. Season with salt and pepper to taste.
Grilling the Filet Mignon
- 5
Preheat the Grill
Preheat your grill to high heat (about 450-500°F).
- 6
Grill the Filet Mignon
Place the seasoned filet mignon on the grill. Cook for about 4-5 minutes on each side for medium-rare doneness. Adjust cooking time based on your desired doneness.
- 7
Rest the Meat
Once cooked, remove the filet mignon from the grill and let it rest for about 5 minutes before slicing. This allows the juices to redistribute.
Serving
- 8
Plate the Dish
Slice the filet mignon and arrange it on a plate alongside the sautéed vegetables. Optionally, drizzle with extra olive oil or a sprig of rosemary for garnish.
