1. Prepare the Meatloaf
In a large mixing bowl, combine the ground short ribs, chopped onion, bell pepper, breadcrumbs, eggs, minced garlic, salt, black pepper, Worcestershire sauce, and parsley. Mix until well combined.
2. Shape and Bake
Preheat the oven to 350°F (175°C). Shape the mixture into a loaf and place it in a greased baking dish. Bake for 1 hour or until the internal temperature reaches 160°F (71°C).
3. Make the Tomato-Chili Glaze
In a small saucepan, combine 1 cup of tomato sauce with 2 tablespoons of chili sauce. Simmer for 5 minutes, then brush over the meatloaf during the last 15 minutes of baking.
