Prepare Tofu
Press the tofu to remove excess moisture, then cut it into bite-sized cubes.

Cook Noodles
Soak the rice noodles in hot water for about 10 minutes until soft. Drain and set aside.

Stir-Fry Vegetables
In a large pan or wok, heat a tablespoon of oil over medium-high heat. Add the bell pepper, carrot, broccolini, and mushrooms, and stir-fry for about 5 minutes.

Add Tofu
Add the cubed tofu to the pan and stir-fry for another 5 minutes until the tofu is golden.

Combine Noodles and Sauce
Add the soaked noodles and sweet & spicy sauce to the pan. Toss everything together and cook for an additional 2-3 minutes until heated through.

Garnish and Serve
Remove from heat and garnish with chopped cilantro, sliced scallions, and lime wedges. Serve hot.
