Method

Preparing the Burger Patties

    Mix the Meats

    In a large bowl, combine the brisket and ground beef. Mix gently until evenly combined.

    Season the Mixture

    Add salt and black pepper to the meat mixture. Mix until just combined. Do not overwork the meat.

    Form Patties

    Divide the meat mixture into 4 equal portions and shape each portion into a patty, about 3/4 inch thick.

Cooking the Bacon

    Cook the Bacon

    In a skillet over medium heat, cook the bacon slices until crispy. Remove and drain on paper towels.

Cooking the Burger Patties

    Grill the Patties

    Preheat your grill or skillet to medium-high heat. Cook the burger patties for about 4-5 minutes on each side, or until they reach your desired doneness.

    Melt the Cheese

    During the last minute of cooking, place a slice of cheddar cheese on each patty to melt.

Making the Texas Gold Sauce

    Combine Ingredients

    In a small bowl, mix together mayonnaise, yellow mustard, honey, and hot sauce until smooth. Adjust seasoning as needed.

Assembling the Burger

    Toast the Buns

    Lightly toast the brioche buns on the grill or in a toaster.

    Build the Burger

    On the bottom half of each bun, spread a generous amount of Texas Gold sauce. Place a burger patty on top, followed by bacon and pickles. Top with the other half of the bun.
