Preparation
- 1
Prepare the Peppers
Preheat your oven to 375°F (190°C). Slice the tops off the bell peppers and remove the seeds and membranes. Set the hollowed peppers aside.
- 2
Cook the Ground Beef
In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.
- 3
Combine Ingredients
Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.
- 4
Add Seasonings
Stir in cooked rice, tomato sauce, chili powder, cumin, salt, and black pepper. Mix well and let it simmer for about 5 minutes.
Assembly
- 5
Stuff the Peppers
Spoon the beef and rice mixture into each hollowed bell pepper until filled to the top.
- 6
Bake the Peppers
Place the stuffed peppers upright in a baking dish. Cover with foil and bake in the preheated oven for 25 minutes.
- 7
Add Cheese & Finish Baking
Remove the foil and sprinkle shredded cheese on top of each pepper. Return to the oven and bake uncovered for an additional 10 minutes or until the cheese is melted and bubbly.
Garnishing
- 8
Garnish and Serve
Remove the peppers from the oven and let them cool for a few minutes. Garnish with fresh parsley before serving.
