    In a large bowl, pour the buttermilk over the chicken pieces. Ensure each piece is fully submerged. Cover with plastic wrap and refrigerate for at least 4 hours, or preferably overnight.

    In another large bowl, mix together the flour, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper until well combined.

    Heat the Oil

    In a large, deep skillet or Dutch oven, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

    Coat the Chicken

    Remove the chicken from the buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture, ensuring an even coating. Shake off any excess flour.

    Fry the Chicken

    Carefully place the coated chicken pieces into the hot oil, making sure not to overcrowd the pan. Fry for about 12-15 minutes per side, or until golden brown and the internal temperature reaches 165°F (74°C).

    Once cooked, remove the chicken from the oil and place it on a paper towel-lined plate to drain any excess oil. Let it rest for 5 minutes before serving with your choice of sides.
