Method

Roasting the Pork

    Prepare the Pork

    In a bowl, mix the orange juice, lime juice, garlic cloves (minced), cumin, oregano, salt, and black pepper to create a marinade. Place the pork shoulder in a large resealable bag and pour the marinade over it. Seal the bag and refrigerate for at least 8 hours, preferably overnight.

    Slow Roast

    Preheat your oven to 300°F (150°C). Remove the pork from the marinade and place it in a roasting pan. Roast for about 4-5 hours until the pork is tender and easily shreds with a fork. Allow it to rest for 30 minutes before shredding.

Making the Queso

    Create a Roux

    In a saucepan over medium heat, melt the butter. Once melted, add the flour and whisk continuously for about 2 minutes to cook the flour.

    Add Milk and Cheese

    Gradually whisk in the milk until smooth. Continue to cook, stirring frequently until the mixture thickens. Add the cheddar cheese, Monterey Jack cheese, diced jalapeño, and salt. Stir until the cheese is completely melted and the mixture is smooth.

Assembling the Sandwich

    Prepare the Bread

    Slice the Cuban bread loaves in half lengthwise. On the bottom half, layer the shredded roasted pork, sliced ham, and Swiss cheese.

    Dunk the Sandwich

    Close the sandwich with the top half of the Cuban bread and press down slightly. In a skillet or panini press, grill the sandwich for about 3-4 minutes on each side until the bread is crispy and the cheese is melted.

    Serve with Queso

    Slice the sandwich into halves or quarters and serve hot with the homemade queso on the side for dipping.
