Preparation

Prepare the Simple Syrup
In a small saucepan, combine equal parts sugar and water. Heat over medium heat, stirring until the sugar has fully dissolved. Allow to cool before using.

Juicing Limes
Cut limes in half and use a juicer to extract fresh lime juice. Measure out 1 cup of the juice for the cocktail.

Muddle Mint
In a large cocktail shaker, add the fresh mint leaves and simple syrup. Use a muddler or the back of a spoon to gently press the mint leaves to release their oils.

Add Remaining Ingredients
Pour in the fresh lime juice and gin into the shaker with the muddled mint. Add the ice cubes.

Shake It Up
Secure the lid on the shaker and shake vigorously for about 15-20 seconds until well chilled.
Serving

Strain and Serve
Using a fine mesh strainer, strain the cocktail into chilled glasses filled with fresh ice cubes. This will remove any mint leaves and pulp.

Garnish each cocktail with a lime wedge and a sprig of mint for a refreshing presentation.
