Prepare the Tortillas
Cut the corn tortillas into triangles to create chip shapes.
- 2
Heat the Oil
In a large pot, heat the vegetable oil over medium-high heat until hot.
- 3
Fry the Chips
Carefully add a few tortilla triangles into the hot oil, frying them in batches until golden and crispy, about 2-3 minutes per batch.
- 4
Drain and Season
Remove the chips with a slotted spoon and place them on paper towels to drain. Sprinkle with salt while still hot.
Queso

Cook the Chorizo
In a medium saucepan over medium heat, cook the chorizo until browned and cooked through, about 5-7 minutes. Drain excess fat.

Add the cream cheese, cheddar cheese, and milk to the saucepan with the cooked chorizo. Stir until the cheeses are melted and the mixture is smooth.
- 7
Add Jalapenos and Beans
Stir in the diced jalapeno and black beans (if using) into the cheese mixture and heat through for an additional 2-3 minutes.
- 8
Serve Warm
Serve the queso warm alongside the homemade chips for dipping.
