Preparation of Salmon

Season the Salmon
Preheat your grill to medium-high heat. In a small bowl, mix together olive oil, salt, and black pepper. Brush this mixture over the salmon fillets on both sides.

Combine Ingredients
In a medium saucepan, combine the bourbon, brown sugar, soy sauce, minced garlic, and grated ginger. Stir well to combine.

Cook the Glaze
Bring the mixture to a boil over medium heat, stirring occasionally. Once boiling, reduce the heat to low and let it simmer for about 10 minutes, until it thickens slightly.

Thicken the Glaze
In a small bowl, mix the cornstarch with water to form a slurry. Gradually whisk this mixture into the simmering glaze. Continue cooking for another 2-3 minutes until thickened.

Glaze the Salmon
Brush the bourbon glaze over the salmon fillets during the last few minutes of grilling, allowing it to caramelize slightly.
Serving

Plate the Salmon
Remove the salmon from the grill and place it on a serving platter. Drizzle any remaining bourbon glaze over the top.

If desired, sprinkle with sesame seeds and chopped green onions before serving.
