Prepare the Marinade
In a blender, combine garlic cloves, olive oil, adobo seasoning, black pepper, oregano, cumin, salt, and lime juice. Blend until smooth.

Marinate the Pork
Using a sharp knife, make deep cuts in the pork shoulder. Rub the marinade all over the pork, ensuring it gets into the cuts. Place bay leaves on top. Cover and refrigerate for at least 4 hours, preferably overnight.

Preheat the Oven
Preheat your oven to 300°F (150°C).

Crisp the Skin
Remove the foil and increase the oven temperature to 400°F (200°C). Roast for an additional 30-45 minutes, or until the skin is crispy and browned.

Rest and Serve
Remove the pork from the oven and let it rest for at least 20 minutes before slicing. Serve warm.
