    Prepare the Apples

    Wash and core the fresh apples. Cut them into small pieces or slices to help release their flavors.

    Make the Apple Syrup

    In a medium saucepan, combine the chopped apples, sugar, and water. Bring the mixture to a boil over medium heat, stirring occasionally until the sugar dissolves.

    Simmer the Mixture

    Once boiling, reduce the heat and let the mixture simmer for about 20 minutes. Stir in the cinnamon stick and allow the flavors to meld.

    Strain the Syrup

    After simmering, remove the saucepan from heat. Strain the mixture through a fine mesh strainer or cheesecloth into a bowl to separate the apple solids from the syrup.

    Stir in the lemon juice into the strained apple syrup, mixing well to combine.

    Combine with Carbonated Water

    In a large pitcher, combine the apple syrup with carbonated water. Adjust the sweetness to taste by adding more syrup if desired.
