Preparation of Tortillas

Fry the Tortillas
Heat the vegetable oil in a large frying pan over medium-high heat. Once hot, fry the corn tortillas one at a time until they are crispy and golden brown, about 2-3 minutes per side. Remove and drain on paper towels.
Assembling the Dish

Combine with Salsa
In the same frying pan, reduce the heat to low and add the fried tortillas back into the pan. Pour the salsa verde or roja over the tortillas, tossing gently to coat them evenly. Let them warm in the salsa for about 1-2 minutes.

Fry the Eggs
In a separate non-stick skillet, heat a small amount of oil over medium heat. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 3-4 minutes. Flip carefully to cook the other side for an additional 1-2 minutes for over-easy eggs.
