Cook the Eggs
In a non-stick skillet over medium heat, add a small amount of oil or butter. Crack the eggs into the skillet and season with salt and pepper. Cook until the whites are set but the yolks are still runny, about 3-4 minutes.

Prepare the Salsas
In separate bowls, have the salsa verde and salsa roja ready for serving. You can warm them slightly in a microwave if desired.

Heat the Side Dishes
In a small pot, heat the Mexican rice and Chile piquín black beans over low heat until warmed through. Warm the tortillas in another skillet or directly over an open flame for a few seconds on each side.

Assemble the Dish
On a plate, place a serving of Mexican rice and Chile piquín black beans. Carefully place the sunny side up eggs on top. Drizzle salsa verde over one egg and salsa roja over the other. Sprinkle with crumbled queso cotija and add sliced avocado on the side. Serve with warm tortillas.
