Pork Al Pastor Preparation

In a large bowl, combine the pineapple juice, achiote paste, minced garlic, cumin, salt, black pepper, and lime juice to create a marinade.

Cut the pork shoulder into large chunks and add them to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 2 hours, or overnight for best results.

Transfer the marinated pork to a slow cooker. Cook on low for 6-8 hours until the pork is tender and shreds easily.

Once cooked, shred the pork using two forks and mix it with the juices from the slow cooker.
