Guacamole

    Prepare the Avocados

    Cut the ripe avocados in half, remove the pit, and scoop the flesh into a mixing bowl.

    Mash and Mix

    Using a fork, mash the avocados to your desired consistency. Add lime juice, chopped red onion, diced tomatoes, cilantro, salt, and minced jalapeño. Mix well.

    Taste and Adjust

    Taste the guacamole and adjust seasoning as needed with more salt or jalapeño.

Mushroom Choriqueso

    Cook the Chorizo

    In a skillet over medium heat, cook the chorizo until browned and cooked through, about 5-7 minutes.

    Add the Mushrooms

    Add the sliced mushrooms to the skillet and cook until they are tender, about 4-5 minutes.

    Combine Cream Cheese and Cheddar

    Reduce heat to low and add the softened cream cheese, shredded cheddar cheese, and milk to the skillet. Stir until the cheeses are melted and combined.

    Stir in the chopped cilantro and remove from heat. Transfer to a serving dish.

Yxta Salsa Brava

    Prepare the Ingredients

    Roast the tomatoes and garlic cloves until charred. Allow them to cool slightly, then peel the garlic.

    Blend the Salsa

    In a blender, combine roasted tomatoes, garlic, chopped jalapeño, red onion, lime juice, and salt. Blend until smooth.

    Taste the salsa and adjust seasoning with more salt if necessary.

Fresh Chips

    Cut the Tortillas

    Cut the corn tortillas into wedges or strips, as desired.
