Directions

  1. 1

    Prepare the Beans

Rinse the black beans under cold water and soak them in water overnight.

  2. 2

    Sauté the Aromatics

In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent, about 5 minutes.

  3. 3

    Add Spices

Add the dried Chile Piquín, cumin, salt, and black pepper to the pot. Stir well and cook for another 1-2 minutes until fragrant.

  4. 4

    Simmer the Beans

Drain the soaked black beans and add them to the pot along with the vegetable broth. Bring to a boil, then reduce to a simmer. Cover and cook for about 1 to 1.5 hours, or until the beans are tender.

  5. 5

    Finish with Cilantro and Lime

Once the beans are cooked, remove from heat and stir in chopped fresh cilantro. Squeeze the juice of one lime into the beans and mix well.

  6. 6

    Serve

Serve the Chile Piquín black beans warm, garnished with additional cilantro and lime wedges if desired.
