Method

Marinated Skirt Steak

  1. 1

    Prepare the Marinade

In a large bowl, combine lime juice, olive oil, minced garlic, cumin, chili powder, salt, and black pepper.

  2. 2

    Marinate the Steak

Add the skirt steak to the marinade, ensuring it is well-coated. Cover and refrigerate for at least 2 hours, or overnight for best flavor.

  3. 3

    Grill the Steak

Preheat the grill to high heat. Remove the steak from the marinade and grill for about 4-5 minutes on each side for medium-rare, or until desired doneness.

Guacamole

  1. 4

    Prepare the Guacamole

In a bowl, mash ripe avocados with lime juice, then mix in red onion, diced tomato, chopped cilantro, and salt until well combined.

  2. 5

    Serve

Transfer the guacamole to a serving bowl and set aside.

Salsa Macha

  1. 6

    Prepare the Salsa

In a skillet over medium heat, toast the dried chilies and garlic cloves until fragrant, about 2-3 minutes. Remove from heat.

  2. 7

    Blend the Salsa

In a blender, combine the toasted chilies, garlic, olive oil, and salt. Blend until smooth.

Cebollita

  1. 8

    Grill the Green Onions

Grill the green onions for about 2-3 minutes until they are slightly charred and tender.

Grilled Corn

  1. 9

    Prepare the Corn

Preheat the grill to medium-high heat. Husk the corn and brush with melted butter.

  2. 10

    Grill the Corn

Place the corn on the grill and cook for about 10-15 minutes, turning occasionally, until tender and slightly charred. Sprinkle with salt before serving.

Tortillas

  1. 11

    Warm the Tortillas

Warm the corn tortillas on the grill for 30 seconds on each side until pliable.
