Method

Shrimp Preparation

  1. 1

    Prep the Shrimp

Rinse the Mexican sweet shrimp under cold water and pat dry with paper towels.

  2. 2

    Prepare Garlic and Chile

Mince the garlic cloves and chop the chile de árbol into small pieces, discarding the stems.

  3. 3

    Sauté

In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat. Add the minced garlic and chopped chile de árbol. Sauté until fragrant, about 1-2 minutes.

  4. 4

    Cook the Shrimp

Add the shrimp to the skillet, season with salt and black pepper, and cook for 3-5 minutes until they turn pink and opaque. Remove from heat and stir in the remaining butter until melted.

Cilantro Lime Rice Preparation

  1. 5

    Cook the Rice

In a medium pot, combine the jasmine rice and water. Bring to a boil, then reduce to low heat, cover, and simmer for 15 minutes until the rice is tender and water is absorbed.

  2. 6

    Season the Rice

Remove the pot from heat. Fluff the rice with a fork, then stir in the lime juice and chopped cilantro. Season with salt to taste.

Ciabatta Preparation

  1. 7

    Prepare the Ciabatta

Preheat the oven to 375°F (190°C). Slice the ciabatta loaf in half and drizzle with olive oil.

  2. 8

    Toast the Bread

Place the ciabatta halves on a baking sheet and toast in the oven for about 10 minutes or until golden and crispy.
