Burrito Ingredients

Method

Burrito Preparation

  1. 1

    Prepare the Black Beans

In a medium saucepan, heat the olive oil over medium heat. Add the black beans, garlic powder, ground cumin, salt, and black pepper. Stir well to combine.

  2. 2

    Heat the Beans

Cook the mixture for about 5-7 minutes, stirring occasionally, until the beans are heated through and slightly thickened. If desired, mash the beans slightly with a fork for a creamier texture.

  3. 3

    Prepare the Tortillas

While the beans are heating, warm the flour tortillas in a dry skillet over medium heat for about 30 seconds on each side until soft and pliable.

  4. 4

    Assemble the Burritos

Lay a warmed tortilla flat on a clean surface. Spoon about 1/4 cup of the black bean mixture onto the center of the tortilla. Sprinkle with about 1/4 cup of Oaxaca cheese and add cilantro if using.

  5. 5

    Roll the Burritos

Fold in the sides of the tortilla and roll it up tightly from the bottom to the top. Repeat the process for the remaining tortillas.

  6. 6

    Serve the Burritos

Serve the burritos warm, optionally with salsa or guacamole on the side.
