Pulled Chicken

    Prep

    Trim any excess fat from the chicken thighs and pat them dry with paper towels. Finely chop the onion and mince the garlic. Measure out spices and other ingredients.

    Season

    In a small bowl combine brown sugar, smoked paprika, ground cumin, chili powder, kosher salt, and black pepper. Rub the spice mixture evenly over both sides of the chicken thighs.

    Sear (optional)

    Heat olive oil in a large skillet over medium-high heat. When hot, add chicken thighs and sear 2 minutes per side until lightly browned. You do not need to cook through; searing adds flavor. Transfer seared thighs to a slow cooker or a medium oven-safe pot/casserole if using the oven/stovetop method.

    Slow Cook / Braise

    Add the chopped onion and minced garlic to the bottom of the slow cooker or to the pot. Pour in chicken broth and apple cider vinegar. Place the chicken thighs on top. Cover and cook: Slow cooker method - low for 4–5 hours or high for 2–3 hours. Stovetop/oven method - bring to a simmer on the stove, then cover and bake at 325°F (160°C) for 1.5–2 hours until meat is very tender and pulls apart easily.

    Shred

    When the chicken is tender, remove the thighs to a cutting board or bowl. Reserve 1/2 cup of the cooking liquid. Using two forks or meat claws, shred the chicken into bite-sized pieces. Discard any remaining large bits of fat.

    Sauce and Finish

    Return shredded chicken to the slow cooker or pot. Stir in barbecue sauce, reserved cooking liquid (add a little at a time to reach your desired moisture), and lime juice if using. Taste and adjust seasoning — add more salt, pepper, or brown sugar to balance flavors. Stir in chopped cilantro if using. Keep on warm for 10–15 minutes to let flavors meld.

To Serve

    Spoon pulled chicken onto buns, tortillas, or over rice. Top with coleslaw and an extra drizzle of barbecue sauce if desired. Serve immediately.

    Leftovers: Cool completely, refrigerate in an airtight container for up to 4 days or freeze up to 3 months. Reheat gently in a skillet with a splash of broth or in the microwave until warmed through.
