    Sauté aromatics

    Warm a medium saucepan over medium heat and add the olive oil. When oil shimmers, add the finely chopped onion and sauté for 4–5 minutes until soft and translucent. Add the minced garlic and grated ginger and cook, stirring, for 30–45 seconds until fragrant but not browned.

    Deglaze and combine liquids

    Pour in the apple cider vinegar and pineapple juice to deglaze the pan, scraping any browned bits from the bottom. Stir in the honey, Dijon mustard, gluten-free tamari (or coconut aminos), tomato paste, and water until smooth.

    Add spices and season

    Stir in the turmeric, smoked paprika, ground mustard, kosher salt, black pepper, and red pepper flakes (if using). Bring the mixture to a gentle simmer over medium-low heat.

    Simmer and reduce

    Reduce heat to low and simmer gently, uncovered, for 12–15 minutes, stirring occasionally so the sauce does not stick. Allow the sauce to reduce and thicken slightly; it should coat the back of a spoon.

    Adjust thickness (optional)

    If you prefer a thicker, glossy glaze, mix 1 tsp cornstarch with 1 tbsp cold water to make a slurry. While whisking the simmering sauce, slowly whisk in the slurry. Continue simmering for 1–2 minutes until the sauce thickens. If it becomes too thick, thin with a splash of water or additional pineapple juice.

    Blend for smoothness (optional)

    For a silky-smooth sauce, remove the pan from heat and let cool for 2–3 minutes, then transfer to a blender or use an immersion blender to puree until smooth. Return to low heat briefly if you want it warmer for serving.

    Taste and finish

    Taste and adjust seasoning: add a pinch more salt, a squeeze of vinegar, or a little honey to balance acidity and sweetness as needed. If you want more smoke, add a touch more smoked paprika.

    Cool and store

    Let the sauce cool to room temperature, then transfer to a sterilized jar or airtight container. Refrigerate up to 2 weeks. Reheat gently before using; shake or stir well. This sauce is gluten-free and made without preservatives.
