    Prepare bread and butter

    Bring butter to room temperature so it’s easily spreadable. Spread a thin, even layer of butter on one side of each of the 4 bread slices. These buttered sides will be the outsides of the sandwich and will contact the pan.

    Assemble cheese filling

    On the unbuttered side of two bread slices, divide and arrange the grated/shredded and sliced cheeses evenly (about 1 cup cheddar + 1/2 cup gruyère total per two sandwiches). If using Dijon mustard, spread 1/2 tsp mustard on the unbuttered side of each slice before adding cheese. Sprinkle a light pinch (about 1/8–1/4 tsp) salt and a crack of black pepper over the cheese to enhance flavor. Top each with the remaining bread slice, buttered side facing out.

    Preheat pan

    Place a heavy skillet or nonstick frying pan over medium-low heat. Allow it to warm for 2 minutes. A lower temperature ensures even melting without burning the bread.

    Cook sandwiches

    If using oil for extra crispness, add 1/2 tsp oil to the pan and swirl to coat. Place one sandwich in the pan, buttered side down. Cook for 3–4 minutes over medium-low heat, pressing gently with a spatula every minute to encourage even contact and melting. After the bottom is golden brown and firm, flip the sandwich. Add the remaining 1/2 tsp oil to the pan if needed and cook the second side for 2–3 minutes, pressing gently, until golden brown and the cheese is fully melted. Total cooking time per sandwich: about 5–7 minutes. Repeat with the second sandwich.

    Finish and rest

    When bread is deeply golden and cheese has melted, transfer sandwich to a cutting board. Let rest 1 minute (this helps avoid cheese running out). Slice in half diagonally or down the middle and serve immediately.
