Method

Marinate & Grill Chicken

    prepare chicken

    If chicken breast is thicker than 1 inch, butterfly or pound to an even 1/2–3/4-inch thickness for even cooking. Pat dry with paper towels.

    In a small bowl combine olive oil, lemon juice, minced garlic, smoked paprika, onion powder, salt, and black pepper. Whisk to form a marinade.

    Brush or rub the marinade over both sides of the chicken breast. Let rest at room temperature for 10–15 minutes (or refrigerate up to 30 minutes).

    Heat a grill pan or outdoor grill to medium-high (about 400°F/200°C). Lightly oil the grate or pan.

    Grill the chicken 4–5 minutes per side, or until internal temperature reaches 165°F (74°C) and juices run clear. Remove from heat, tent with foil and let rest 5 minutes, then slice or leave whole depending on sandwich build.

Cook Bacon & Toast Bread

    While chicken rests, cook the bacon in a skillet over medium heat until crisp, 6–8 minutes, turning occasionally. Transfer to paper towels to drain and cool, then halve lengthwise if desired for sandwich layering.

    Spread the softened butter evenly on one side of each Texas toast slice. Place buttered-side down in a clean skillet over medium heat or under a broiler. Toast 2–3 minutes per side (or broil 1–2 minutes per side) until golden brown and crisp. Remove from heat.

Assemble Sandwich

    Place one slice of toasted Texas toast on your work surface, toasted side down (buttered side facing out).

    Layer half of the shredded Monterey Jack and cheddar cheeses onto the toast in an even layer so cheese will melt slightly from warm chicken.

    Place the grilled chicken breast (whole or sliced) on top of the cheese.

    Top the chicken with the cooked bacon strips.

    Add the torn lettuce and tomato slices over the bacon.

    Drizzle Miss Fancy Ranch evenly over the lettuce and tomato (about 2 tablespoons). If you prefer extra dressing, add more to taste.

    Sprinkle the remaining shredded cheeses on top, then place the second slice of toasted Texas toast on top, toasted side up.

    If you want the cheese more melted, return the assembled sandwich to a skillet over low heat, cover loosely, and heat 1–2 minutes until cheese softens (optional).

    Cut the sandwich in half diagonally. Garnish with chopped fresh parsley if desired and serve immediately.
