Method

Bleu Cheese Dressing

    Combine base

    In a medium bowl, whisk together 1/2 cup mayonnaise and 1/4 cup sour cream until smooth.

    Whisk in 2 tablespoons buttermilk, 1 teaspoon lemon juice, 1/2 teaspoon white wine vinegar, 1/2 teaspoon minced garlic, 1/4 teaspoon salt and 1/8 teaspoon black pepper until combined and slightly thickened. Adjust buttermilk to reach desired pourable consistency.

    Fold in 1/4 cup bleu cheese crumbles and 1/4 teaspoon Worcestershire sauce. Taste and adjust seasoning: add more salt, pepper or lemon if needed. For a smoother dressing, briefly pulse the mixture in a food processor or use an immersion blender; for chunkier dressing, leave as-is.

    Cover and chill the dressing at least 15 minutes to let flavors meld. Can be made up to 24 hours ahead.

Wedge

    Prepare bacon: cook 3 slices of bacon until crisp (in skillet over medium heat, about 8–10 minutes, or in oven at 400°F/200°C for 12–15 minutes). Drain on paper towels, then crumble into small pieces.

    Prepare lettuce: remove any loose outer leaves from the head of iceberg. Using a sharp knife, cut the head in half through the core, then cut one half into two equal quarters to form a wedge. Keep core intact so wedge holds together. Pat wedges dry with paper towels to remove excess moisture.

    Slice the red onion paper-thin using a sharp knife or mandoline. Separate the rings and, if desired, soak in cold water for 5 minutes to mellow the bite, then drain and pat dry.

    Halve 12 cherry tomatoes. If tomatoes are large, quarter them.

    Assemble: place one iceberg wedge on a chilled plate. Drizzle about 2–3 tablespoons of the chilled bleu cheese dressing over the top and sides of the wedge (reserve extra dressing for serving). Scatter 1/2 cup bleu cheese crumbles evenly over the wedge.

    Distribute halved cherry tomatoes and shaved red onion over and around the wedge. Sprinkle the crumbled bacon evenly over the top.

    Finish with a light sprinkle of flaky sea salt (about 1/4 tsp) and a grinding of black pepper (about 1 tsp). Serve immediately with additional bleu cheese dressing on the side.
