Pretzel Breaded Cheese Bites

    Prep the cheese

    Trim the cheddar block into a clean rectangle if needed, then cut into 24 bite-sized cubes (about 1" each). Pat cubes dry with paper towel and place on a tray. Chill in the refrigerator for 15–20 minutes — chilled cheese holds shape better during breading and frying.

    Set up breading stations

    Place the flour in a shallow bowl and season with 1/4 tsp salt, 1/8 tsp black pepper, and 1/8 tsp garlic powder. In a second bowl, whisk together the eggs and 2 tablespoons milk until smooth. In a third bowl, combine the crushed pretzel crumbs, panko (if using), remaining 1/4 tsp salt, 1/8 tsp garlic powder, and 1/8 tsp black pepper; mix well.

    Bread the cheese

    Working with chilled cheese cubes, dredge each cube in flour (shake off excess), dip into the egg wash, then press into the pretzel crumb mixture to coat completely. For an extra-secure coating, return each coated cube to the egg wash and then again to the pretzel crumbs for a double coat. Place breaded cubes on a parchment-lined tray and return to the refrigerator for at least 10 minutes to help the coating adhere.

    Heat oil and fry

    Pour vegetable oil into a deep skillet or pot to a depth of about 1" (roughly 1 cup for a medium skillet). Heat over medium-high to reach 350°F (175°C). If you don't have a thermometer, test with a small breadcrumb — it should sizzle and brown in ~30–45 seconds. Fry the cheese bites in small batches (6–8 at a time, depending on pan size) for 45–70 seconds per side, turning once, until golden brown. Avoid overcrowding. Use a slotted spoon to transfer bites to a wire rack or paper towel-lined plate. Let rest 1–2 minutes before serving — cheese will be very hot inside.

    If preparing ahead, keep bites warm in a 200°F (95°C) oven on a wire rack for up to 20 minutes. Serve immediately with jalapeño ranch.

Jalapeño Ranch Dipping Sauce

    Prepare the jalapeño: halve the jalapeño, remove seeds for milder heat (or keep some seeds for more spice), and finely mince. For a smoother sauce, remove the seeds and stem and puree the jalapeño with the mayo and sour cream in a small blender or use a mini-chop.

    Mix the dressing: in a bowl combine mayonnaise, sour cream, buttermilk, minced or pureed jalapeño, chopped cilantro (if using), lime juice, dried dill, garlic powder, onion powder, 1/4 tsp salt, and 1/8 tsp black pepper. Whisk until smooth and taste; adjust salt, lime, or jalapeño to preference. If the sauce is too thick, thin with additional 1/2 teaspoon to 1 tablespoon buttermilk or milk to reach desired dipping consistency.

    Chill and meld: refrigerate the sauce for at least 15 minutes to allow flavors to meld. Bring to room temperature for 5 minutes before serving if desired. Serve in a small bowl alongside warm cheese bites.
