Prepare the Crabs
Rinse the soft shell crabs under cold water and pat them dry with paper towels.

Make the Batter
In a medium bowl, whisk together the all-purpose flour, cornstarch, salt, black pepper, and garlic powder. Gradually add cold water while whisking until the batter is smooth.

Heat the Oil
In a deep frying pan or a pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Crabs
Dip each soft shell crab into the batter, ensuring it is fully coated. Carefully place the crabs in the hot oil, frying them in batches if necessary. Fry for about 3-4 minutes on each side or until golden brown and crispy.

Drain and Serve
Remove the fried crabs from the oil and place them on a paper towel-lined plate to drain excess oil. Chop the scallions and sprinkle them over the fried crabs before serving.
