    Make the Avocado Salsa

    In a bowl, mash the avocado and mix it with finely chopped red onion, cilantro, lime juice, and salt. Set aside.

    Prepare the Bacon

    In a skillet, cook the applewood smoked bacon over medium heat until crispy. Remove and drain on paper towels.

    Poach the Eggs

    Fill a saucepan with water and bring it to a light simmer. Crack each egg into a small bowl, then gently slide the eggs into the simmering water. Poach for about 3-4 minutes until the whites are set but the yolks are still runny.

    Toast the English Muffins

    Split the English muffins and toast them until golden brown.

Hollandaise Sauce

    Prepare the Hollandaise Sauce

    In a bowl over a pot of simmering water (double boiler), whisk the egg yolks until they start to thicken. Gradually add melted butter while whisking continuously until the sauce is thick and creamy. Stir in lemon juice, cayenne pepper, and salt to taste.

    Assemble the Dish

    On each toasted English muffin half, layer the avocado salsa, crispy bacon, and poached egg. Drizzle with hollandaise sauce and top with slices of fresh tomato.
