Cook Pasta
Cook the garganelli pasta according to package instructions until al dente. Drain and set aside.

Sauté Mushrooms
In a large skillet, heat a tablespoon of olive oil over medium heat. Add the cremini mushrooms and sauté until they are golden brown, about 5-7 minutes.

Add Vegetables
Add the sun-dried tomatoes, artichoke hearts, and roasted garlic to the skillet. Stir and cook for another 3-4 minutes.

Add Spinach
Stir in the fresh spinach and cook until wilted. Season with salt and black pepper to taste.
Sauce

Prepare the Cream Sauce
Reduce the heat to low and pour in the heavy cream. Allow it to simmer gently for 2-3 minutes until slightly thickened.

Combine Chicken
Add the smoked chicken to the skillet and stir until well combined. Let it heat through for another 2 minutes.

Combine Pasta
Fold in the cooked garganelli pasta, making sure to coat it well with the sauce.

Serve the smoked chicken garganelli in bowls, topped with fresh tomato basil salsa and a sprinkle of Grana Padano cheese.
