Preparation

    Cook Bacon

    In a skillet over medium heat, cook the applewood smoked bacon until crispy. Remove from the skillet and set aside to drain on paper towels.

    Cook Chorizo

    In the same skillet, add the chorizo and cook until browned, breaking it up into small pieces. Drain excess fat if needed.

    Sauté Vegetables

    Add wild mushrooms and bell peppers to the skillet. Sauté until softened, about 5 minutes.

    Add Spinach

    Add fresh spinach to the skillet and cook until wilted. Season with salt and black pepper. Remove the mixture from the skillet and set aside.

    Prepare Eggs

    In a large bowl, whisk together the eggs, salt, and black pepper. Pour the egg mixture into the skillet and cook over medium-low heat.

    Combine Eggs and Filling

    As the eggs start to set, gently stir and lift the edges to allow uncooked eggs to flow to the bottom. Once the eggs are mostly set but still slightly runny, add the sautéed vegetable mixture and sprinkle with cheddar cheese.

    Finish Omelette

    Fold the omelette in half and cook for another minute until the cheese is melted and the eggs are fully cooked.

Tomato Basil Salsa

    Prepare Salsa

    In a bowl, combine diced tomatoes, chopped basil, finely chopped red onion, olive oil, lemon juice, and salt to taste. Mix well.

Serving

    Serve Omelette

    Serve the farmers omelette hot topped with the tomato basil salsa.
