Make the Crust
In a medium bowl, mix crushed Oreo cookies with melted butter until combined. Press the mixture firmly into the bottom of a 9x9-inch baking dish. Place in the freezer to set while preparing the ganache.

Prepare the Ganache
In a small saucepan, heat the heavy cream over medium heat until just simmering. Remove from heat and add the chopped milk chocolate. Let it sit for a minute, then stir until smooth. Allow to cool slightly.

Assemble the Ice Cream Bar
Spread the vanilla ice cream over the chilled crust. Pour the ganache evenly on top of the ice cream. Place back in the freezer for about 1 hour, or until set.

Make the Peanut Butter Streusel
In a bowl, combine the flour, brown sugar, and salt. Add peanut butter and softened butter, mixing until crumbly. Spread the streusel on a baking sheet and bake at 350°F (175°C) for about 10-12 minutes until golden. Allow to cool.

Final Assembly
Once the ice cream bar is set, sprinkle the peanut butter streusel on top and drizzle with caramel sauce before slicing into bars.
