Method

Preparing the Salmon

    Prepare the Cedar Plank

    Soak the cedar plank in water for at least 1 hour before grilling.

    Make the Horseradish Chive Aioli

    In a bowl, mix mayonnaise, horseradish, and chopped chives. Set aside.

    Prepare the Salmon

    Preheat the grill to medium heat. Pat the salmon dry and season with salt and pepper. Spread the horseradish chive aioli over the top of the salmon and then cover with panko breadcrumbs.

    Grill the Salmon

    Place the soaked cedar plank on the grill. Once it starts to smoke, place the salmon on the plank and close the grill lid. Grill for about 15-20 minutes or until the salmon is cooked through.

Preparing the Vegetables

    Season the Vegetables

    Toss seasonal vegetables with olive oil, salt, and pepper. Place them on the grill in a grilling basket or on a sheet of aluminum foil.

    Grill the Vegetables

    Grill the vegetables alongside the salmon for about 10-15 minutes, or until tender.

Citrus Roasted Nugget Potatoes

    Prepare the Potatoes

    Preheat the oven to 400°F (200°C). Halve the nugget potatoes and place them in a bowl.

    Season the Potatoes

    In the bowl, add olive oil, lemon juice, orange juice, minced garlic, salt, and pepper. Toss to coat.

    Roast the Potatoes

    Spread the potatoes in a single layer on a baking sheet. Roast for 25-30 minutes or until golden and crispy.
