Calamari Preparation

Rinse the fresh calamari tubes under cold water and pat them dry with paper towels. Slice them into rings approximately 1/2 inch thick.

In a mixing bowl, combine the all-purpose flour, cornstarch, black pepper, and sea salt. Mix well until evenly combined.

Coat the calamari rings in the flour mixture, shaking off any excess flour.

In a large heavy-bottomed pot or skillet, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F).

Carefully add the coated calamari rings to the hot oil in batches, ensuring not to overcrowd the pot. Fry for about 2-3 minutes or until golden brown.

Use a slotted spoon to remove the fried calamari from the oil and drain them on paper towels. Season with additional salt if desired.
Garlic Mayo Preparation

In a small bowl, combine the mayonnaise, minced garlic, lemon juice, and a pinch of salt. Mix well until smooth and creamy.

Taste the garlic mayo and adjust the salt if necessary. Refrigerate until ready to serve.
