Preparing Salmon

    Marinate the Salmon

    In a bowl, combine olive oil, lemon juice, garlic powder, salt, and black pepper. Place the salmon fillets in the bowl and coat them well with the marinade. Cover and refrigerate for at least 30 minutes.

    Prepare the Grill

    Preheat the grill to medium-high heat. If using a charcoal grill, wait until the coals are ashed over. For a gas grill, allow it to heat for about 10-15 minutes.

    Grill the Salmon

    Remove the salmon from the marinade and place it skin-side down on the grill. Grill for about 5-7 minutes per side, or until the fish flakes easily with a fork and has nice grill marks.

Preparing Vegetables

    Prepare the Vegetables

    While the salmon is marinating, chop the zucchini and bell peppers into bite-sized pieces. Combine them in a bowl with cherry tomatoes, olive oil, salt, and black pepper, and toss until evenly coated.

    Grill the Vegetables

    Once the salmon is done, place the vegetable mixture on the grill in a grill basket or wrapped in aluminum foil. Grill for about 10-15 minutes, stirring occasionally until they are tender and slightly charred.

Serving

    Plate the Dish

    Once both the salmon and vegetables are cooked, remove them from the grill. Serve the grilled salmon fillets on plates alongside the grilled vegetables. Optionally, drizzle with additional lemon juice before serving.
