Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C) and grease four ramekins with butter or non-stick spray.

  2. 2

    Melt Chocolate and Butter

In a microwave-safe bowl, combine the semi-sweet chocolate and unsalted butter. Microwave in 30-second intervals, stirring in between, until melted and smooth.

  3. 3

    Whisk Eggs and Sugar

In another bowl, whisk together the large eggs, large egg yolks, and granulated sugar until light and frothy.

  4. 4

    Combine Mixtures

Slowly pour the melted chocolate mixture into the egg mixture while continuously whisking. Add the vanilla extract and a pinch of salt, mixing until well combined.

  5. 5

    Add Flour

Gently fold in the all-purpose flour until just combined. Be careful not to overmix.

Baking

  1. 6

    Fill Ramekins

Pour the batter evenly into the prepared ramekins, filling each about 3/4 full.

  2. 7

    Bake

Bake in the preheated oven for 12-14 minutes, or until the edges are set but the center is still soft.

  3. 8

    Cool Slightly

Remove from the oven and let the cakes cool in the ramekins for 1-2 minutes.

  4. 9

    Invert and Serve

Carefully run a knife around the edges of each ramekin to loosen the cake, then invert onto a plate. Dust with powdered sugar and serve warm with a scoop of vanilla ice cream if desired.
